Strawberry Cheesecake Cake Roll

Ingredients

  • 6 eggs
  • 3 cups sugar (600 g), divided
  • 2 tablespoons oil
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 2 teaspoons vanilla
  • 1 ½ cups flour (185 g)
  • ¼ cup powdered sugar (40 g)
  • 8 oz cream cheese (225 g), softened
  • 1 tablespoon vanilla
  • 2 cups strawberry (300 g), sliced

Preparation

  • Preheat oven to 350°F (180°C).
  • In a bowl, whisk the eggs until pale yellow, about 2 minutes.
  • Add in the 2½ cups (300 grams) sugar and whisk again until combined.
  • Mix in oil, baking powder, salt, and vanilla.
  • Add in flour, and fold until smooth and combined.
  • Pour the batter on a parchment paper-lined baking sheet and spread evenly. Gently tap the baking sheet on the counter to release any air bubbles.
  • Bake for 10-15 minutes, or until cooked through.
  • Lay out a kitchen towel and sprinkle with powdered sugar.
  • Once the cake is done, invert it onto the towel and lift the towel to roll the cake into a log. The towel will wrap into the cake.
  • Refrigerate cake for 30 minutes.
  • In a bowl, mix the cream cheese, remaining sugar, and vanilla. Set aside.
  • Place the cake on the counter and unroll.
  • Spread the cream cheese mixture in an even layer over the cake and top with sliced strawberries.
  • Tightly roll the cake bake up, this time just using the towel as a guide.
  • Top with powdered sugar.
  • Slice and serve.

Ingredients

  • 8 slices american cheese, sliced
  • 8 hot dogs
  • 8 wooden skewers
  • 2 cups flour (250 g)
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon baking powder
  • 1 ½ cups milk (360 mL)
  • 2 eggs
  • oil, for frying
  • ketchup, to serve
  • mustard, to serve

Preparation

  • Place a hot dog in the middle of a cheese slice.
  • Roll the cheese slice around the hot dog, then push a wooden skewer inside.
  • Place the cheese-wrapped hot dogs seam side down on a baking sheet.
  • Freeze for 20 minutes.
  • In a large bowl, combine the flour, salt, pepper, baking powder, milk, and eggs, stirring until the batter is smooth and has no lumps.
  • Pour the batter into a tall glass cup for easier dipping.
  • Heat oil in a pot over medium-high heat until 375°F-400°F (190°C-200°C).
  • Take a frozen hot dog and dip it fully into the batter, lifting it out then rotating it to let excess batter drip off.
  • Using tongs, carefully place the battered dog into the hot oil, rotating it so that it frys evenly. Remove when golden brown, then pat with a paper towel to drain.
  • Serve with ketchup and mustard!

Ingredients

Instructions

  • Preheat oven to 325°F. Set aside a muffin pan with paper cups.
  • Add one Oreo cookie into each paper cup.
  • In a medium bowl, beat softened cream cheese, in the meantime add sugar, eggs, vanilla, mixing well until smooth without lumps.
  • Add sour cream, mix well. Stir in chopped cookies, and mix generally using a spatula.
  • Spoon batter on top of the oreo, filling each to almost the top.
  • Place in the lower third of the oven and bake for about 25 minutes until the edges turn light brown.
  • Remove from oven and transfer to cooling racks. 
  • Chill in the fridge for 4 hours. Serve and enjoy!
